You will need: a large pot, a large bowl, a clean towel.
Ingredients
- Wheat Flour - 2 lbs
- Suluguni Cheese - 1½ kg
- Butter - 9.5 oz
- Chicken Egg - 5 pieces
- Water - 10 fl oz
- Salt - to taste
Step by Step guide
Step 1
Fill a pot with water, add some salt, and place it over medium heat.
Step 2
Lightly whisk the eggs, then add water and salt.
Step 3
Then gently add the sifted flour and knead the dough.
Step 4
Divide the dough into 7 pieces (make two of them larger than the others).
Step 5
Shape each piece into a ball and refrigerate the dough for 10 minutes.
Step 6
Next, roll out the dough – it should be thin layers, and the base layer needs to be larger.
Step 7
Grate the cheese using a coarse grater.
Step 8
Melt the butter over low heat.
Step 9
Take a 35 cm baking dish, line it with parchment paper, and grease it. Add the first layer (the edges of the layer should extend beyond the edge of the dish), brush it with oil, and sprinkle cheese over it to cover the entire surface.

The remaining 5 layers need to be boiled. Each layer should be dipped into boiling salted water for 20 seconds, then removed and placed in cold water. After that, the layer should be laid on a towel and dried.

Next, layer the prepared dough in the mold. Brush each layer with oil and sprinkle with cheese.

Then cover the dish with the final layer, folding the edges of the base layer, and brush with oil and beaten egg.

Place the dish in a preheated oven at 392°F for 30 minutes.
