Description
Adobo, a Filipino contribution to our 'Golden Thousand': meat in vinegar and soy sauce. There, in the islands, adobo is made from pork and chicken, vegetables, squid, and even crickets. We made it from chicken thighs.
Ingredients
- Chicken Drumstick - 2½ kg
- Coconut Liqueur - 15 fl oz
- Soy Sauce - 5 fl oz
- Garlic - 2 heads
- Bay leaf - 10 pieces
- Ground Dried Garlic - 1 tablespoon
- Green peppercorns - 1½ spoons
- Vegetable Oil - 0 fl oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Separate the drumsticks from the thighs.
Step 3
Mix vinegar, soy sauce, a head of roughly chopped garlic, bay leaf, minced garlic, and black pepper in a large bowl.
Step 4
Add the marinade to the chicken, mix well, cover with plastic wrap, and refrigerate for 4 hours to marinate.
Step 5
Remove the meat from the marinade and pat it dry. Reserve the marinade.
Step 6
Heat oil in a heavy-bottomed pot and sauté the chicken until golden brown. Set aside for a while.
Step 7
In the same pot, sauté the remaining garlic, chopped in the same way, until golden brown.
Step 8
Return the chicken to the pot and pour in the marinade. Cover with a lid and simmer for 45 minutes.
Step 9
Then remove the lid and simmer the sauce for about 10 minutes.
Step 10
Serve with rice.
