Ingredients
- Lemon - 1 piece
- Poultry - 3 lbs
- Olive Oil - 2 fl oz
- Dried Rosemary - 1 tablespoon
- Smoked salt - 2 spoons
- Ground Cumin - 1½ spoons
- Garlic - 10 cloves
- Salt - to taste
- Ground Black Pepper - to taste
- Spices - 2 spoons
Step by Step guide
Step 1
Using kitchen scissors or a sharp knife, remove the backbone from the chicken, then flatten it by pressing down firmly with your palm. Bend the tips of the wings upwards to prevent them from burning on the grill. Next, carefully lift the skin over the breast with a knife without cutting it, and place three to four thin lemon slices underneath.
Step 2
Place the chicken in a deep baking dish or a similarly sized bowl.
Step 3
Juice the remaining lemon and grate the zest using a fine grater. In a separate bowl, mix it with olive oil, dried oregano, cumin, smoked paprika, freshly ground allspice, crushed garlic, salt, and pepper, and whisk well. Pour the resulting marinade over the chicken and refrigerate overnight.
Step 4
Preheat the grill and heat a wide, flat-bottomed cast iron skillet until it is very hot.
Step 5
Wrap a heavy brick in foil and heat it thoroughly on the grill grate. Place the chicken breast-side down in the skillet and press down firmly with the brick on top.
Step 6
Fry the chicken, turning it once halfway through, for forty to forty-five minutes, until a golden crust forms on both sides. Then remove from heat, let it cool for fifteen to twenty minutes, and serve.
