Almost Classic Pesto
Ingredients
- Fresh basil leaves - 1 bunch
- Garlic - 4 cloves
- Nuts - 1.8 oz
- Grated Pecorino Pepato Cheese - 1.8 oz
- Olive Oil - 3 fl oz
- Champagne Vinegar - 1 tablespoon
Step by Step guide
Step 1
Chop a decent bunch of basil (if it's young, include the stems; if the stems are tough, use only the leaves) in a blender with garlic and nuts.
Step 2
Add a pinch of salt and, while the blender is running, start adding the olive oil in a thin stream – the sauce will lighten in color. The amount of oil depends on the desired consistency of the sauce.
Step 3
At the end, add a tablespoon of good vinegar and cheese. Blend for a few more seconds and the sauce is ready.
Step 4
I make pesto from any greens and with any nuts; it can also be made without cheese, but I always add vinegar, similar to Georgian pkhali.
