Almost Vegetarian Lasagna
Ingredients
- Asparagus - 10.6 oz
- Frozen green bean pods - 10.6 oz
- Citrus Zest Mix - 1 piece
- Cream 22% - 8.8 oz
- Chicken Broth - 10 fl oz
- Garlic - 0.2 oz
- Olive Oil - 5 tablespoons
- Green onion tops - 5 pieces
- Lemon-Pepper Mix - to taste
- Ready-made dry lasagna sheets - 9 pieces
- Grated Pecorino Pepato Cheese - 3.5 oz
- Olive Oil - 1 fl oz
- Homemade Cheese - 10.6 oz
- White Beans - 10.6 oz
- Fresh Mint - ½ bunch
- Salted anchovies in oil - 4 pieces
Step by Step guide
Step 1
Wash the asparagus, cut off the tops and the woody ends. Set the tops aside and discard the woody ends. Preheat the oven to 392°F.
Step 2
Pour olive oil into a hot skillet and add the asparagus.
Step 3
Crush 6 cloves of garlic.
Step 4
Chop the green onions and add them to the asparagus.
Step 5
Grate the lemon zest directly into the skillet and add 4 fillets of anchovies with their juice.
Step 6
After 15–20 minutes, add the frozen peas and beans.
Step 7
Season with freshly ground pepper.
Step 8
Add the mint.
Step 9
Sauté for about 10 minutes, then add the cream and chicken broth.
Step 10
Cover with a lid and bring to a boil.
Step 11
Add half of the homemade cheese. Boil for 10 minutes.
Step 12
On a preheated baking tray, place 1 ladle of the mixture.
Step 13
Layer 3–4 sheets of lasagna on top of the mixture.
Step 14
Sprinkle with grated Parmesan.
Step 15
Repeat layering with the mixture, lasagna sheets, and Parmesan for another 2 times.
Step 16
On the final layer of lasagna sheets, add the remaining homemade cheese diluted with water. Place the reserved asparagus tops on top and sprinkle with Parmesan.
Step 17
Place the baking tray in the oven for 10–20 minutes.
