Description
Recipe for quick puff pastry: you will need 4 cups of all-purpose flour, 1 pack of margarine or butter (200 grams), 1 egg, 1/3 cup of cold boiled water, salt, and baking soda activated with lemon juice. Sift the flour and add salt. Grate the margarine or butter into the flour and chop with a knife until crumbly. Gather the crumbs into a mound and make a well at the top, where you will crack in the egg and add the baking soda, along with a few drops of lemon juice. Gradually add water to knead the dough and refrigerate it for 30 minutes.

- Onion - 3 pieces
- White Cabbage - 1 head
- Tomatoes - 4 pieces
- Smoked pork knuckle - 0.1 oz
- Farm fresh eggs - 4 pieces
- Grated Pecorino Pepato Cheese - 14.1 oz
- 20% Sour Cream - 7.1 oz
- Ground Caraway - 2 teaspoons
- Ground Black Pepper - to taste
- Ocean salt - to taste
Step by Step guide
Step 1
Wash the cabbage, remove the core, and slice it into 1 cm strips.
Step 2
Peel and slice the onion into rings. Mix the onion and cabbage, place them in a heavy-bottomed pot, add a little salt and water, and simmer for 25 minutes.
Step 3
Roll out the dough to fit the baking tray. Moisten the tray with water and lay the dough on it. Raise the edges of the dough.
Step 4
Sprinkle the grated cheese over the dough, then layer the cabbage and onion mixture on top (the water should have evaporated). Sprinkle a little caraway seeds. Place the tomatoes, cut crosswise on top, and sprinkle the cuts with salt. Insert 4 pieces of smoked pork loin vertically nearby.
Step 5
Prepare a mixture of sour cream, eggs, salt, caraway seeds, and ground black pepper. To give the mixture a golden color, you can add a pinch of turmeric. Pour this over the pie.
Step 6
Bake in a preheated oven at 356°F for 35–40 minutes. Serve warm.
