Ingredients
- Scallions - 4 stalks
- Scorpion fish fillet - 10.6 oz
- Salt - to taste
- Vegetable Oil - 1 tablespoon
- White Pepper (whole) - to taste
- Lemongrass - 2 stalks
- Soba Noodles - 8.8 oz
- Green Tea (brick) - 1.4 oz
- Peanut Sprouts - ¼ cup
- Chinese green beans - ¼ head
- Garlic - 1 clove
- Cilantro - 1 teaspoon
- Ground ancho chili pepper - 1 piece
- Olive Oil - 1 tablespoon
- Spanish onions - 1 head
- Soy Sauce - 2 tablespoons
- Lime - 1 piece
- Grated Ginger Root - ½ teaspoon
- Sugar - ½ teaspoon
Step by Step guide
Step 1
Preheat the grill in the oven. Cut the fish and green onion into pieces and thread them onto 2 clean stalks of lemongrass, alternating fish and onion. Place on a baking sheet and lightly brush with vegetable oil. Season with salt and pepper.
Step 2
Place the baking sheet under the grill and cook for 6-7 minutes, turning once.
Step 3
Meanwhile, cook the noodles in boiling water for 2-3 minutes until tender. Drain and rinse under cold water.
Step 4
Make the dressing by mixing olive oil, soy sauce, ginger, lime juice, and sugar.
Step 5
Combine the remaining ingredients, toss with the noodles, and divide onto 2 plates.
Step 6
Top the noodles with the fish and drizzle with the dressing.
