Apple Salad with Grape Dressing
Ingredients
- Peeled chestnuts - 2.3 oz
- Concord Grapes - 4.8 oz
- Walnuts - 2 tablespoons
- Lemon - 2 pieces
- Meyer Lemon Juice - ¼ cup
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Green Apples - 6 pieces
- Red Grape Juice - 6.3 oz
- Merlot Grapes - 6.3 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Spread the walnuts on a baking sheet and bake for 10 minutes until golden. Let cool.
Step 2
In a blender, place the Concord grapes and blend until pureed. Strain through a sieve into a small bowl. Add the walnut oil and lemon juice. Mix well, season with salt and pepper.
Step 3
Fill a large bowl with ice water. Cut the lemons in half and squeeze the juice into the water, adding the zest as well.
Step 4
Using a mandoline, slice the apples into thin strips and transfer them to the lemon water.
Step 5
Drain the apples and transfer them to a bowl. Add the halved green and red grapes, drizzle with the dressing, and mix. Sprinkle with slightly crushed walnuts and serve.
