Apple Salad with Tuscan Kale and Caramelized Cashews
Ingredients
- Cashews - 1 cup
- Black sesame seeds - 1 tablespoon
- Maple syrup - 2 tablespoons
- Cider - ¼ cup
- Sugar - ¼ cup
- Vegetable Oil - 2 tablespoons
- Tuscan kale - 17.6 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Apple - 1 piece
Step by Step guide
Step 1
In a small skillet over medium heat, toast the cashews, stirring, for about 2 minutes. Transfer to a plate and place the skillet back on the heat.
Step 2
Add the sesame seeds and toast until fragrant, about 45 seconds. Transfer the sesame seeds to another plate and return the skillet to the heat. Pour in the maple syrup and reduce until thickened, about 1 minute. Add the cashews and mix with the syrup.
Step 3
Spread the cashews on a sheet of foil, sprinkle with sesame seeds, and let cool completely.
Step 4
In a small bowl, mix the vinegar with the cider, sugar, and oil; stir until the sugar is dissolved.

Pour ½ cup of the prepared dressing into a large bowl, add the kale, and season with salt and pepper.
Step 6
Massage the kale with the dressing using your hands, letting it sit for at least 15 minutes to soften. Toss the kale with the dressing again and transfer to a serving dish.

Combine the apple slices with the remaining dressing in a bowl and arrange the apple on top of the kale. Chop the cashews and sprinkle over the salad before serving.
