Ingredients
- Pitted Wild Apricots - 6 pieces
- Plums - 6 pieces
- Lemon - 1 piece
- Rosemary - 1 sprig
- Sugar - 12.7 oz
- Water - 8 fl oz
- Sparkling water - to taste
Step by Step guide
Step 1
Remove the pits from the apricots and plums and place them in a small saucepan. Add the zest and juice of one lemon, rosemary, sugar, and a cup of water. Set over heat and bring to a boil.
Step 2
Remove the saucepan from the heat and allow it to cool slightly. Blend all the contents together with a sprig of rosemary. It's important that the fruits are fully puréed.
Step 3
Strain the resulting purée-like syrup through a sieve to remove the rosemary and achieve a smooth consistency.
Step 4
Dilute the syrup with sparkling water to taste, approximately 1:8, add ice, and serve.
