Ingredients
- Arista - 9.9 oz
- Courgette - 7.1 oz
- Eggplants - 7.1 oz
- Orange Bell Peppers - 4.2 oz
- Baking Tomatoes - 21.2 oz
- Marinated cherries - 4.2 oz
- Adjika - 0.1 oz
- Salt - 0.3 oz
- Safflower Oil - to taste
- Sugar - 0.4 oz
- Parmesan Cheese - 1.4 oz
- Cilantro - 0.4 oz
- Garlic - to taste
Step by Step guide
Step 1
Pour water into a deep pot and place it on high heat.
Step 2
Salt the water.
Step 3
Once the water boils, reduce the heat to medium and add the pasta to the pot.
Step 4
Cook until done for about 7 minutes.
Step 5
Drain the cooked pasta in a colander and let the water drain.
Step 6
Slice the zucchini into thin rounds.
Step 7
Do the same with the eggplant.
Step 8
Remove the stems and seeds from the bell pepper and slice it thinly.
Step 9
Cut the cherry tomatoes in half.
Step 10
Finely chop the garlic.
Step 11
Place a skillet on the heat and add sunflower oil.
Step 12
Add the garlic, sliced vegetables, and peeled tomatoes to the skillet. Sauté the mixture over medium heat for a few minutes.
Step 13
Add adjika, salt, and sugar to the skillet. Stir and heat through.
Step 14
Combine the vegetable stew with the pasta.
Step 15
Garnish with cilantro leaves and grated Parmesan.
