Description
The pilaf can include a variety of dried fruits. Whole almonds can also be used, but they should be peeled beforehand.
Ingredients
- Pumpkin - 4 lbs
- Chopped almonds - 1.8 oz
- Basmati rice - 3.5 oz
- Butter - 3.5 oz
- Raisins - 1.8 oz
- Apple - 1 piece
- Dates - 1.8 oz
- Prunes - 1.8 oz
- Honey - to taste
- Salt - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Boil the rinsed rice for 4-5 minutes, then drain the excess water.
Step 3
Toast the almonds in a dry skillet until golden brown, then transfer them to a clean dish.
Step 4
In the same skillet, melt 20 grams of butter and sauté the peeled and diced apple with the prepared dried fruits for 2–3 minutes.
Step 5
Wash the pumpkin, cut off the top, and scoop out all the seeds and fibers.
Step 6
Combine the prepared dried fruits, almonds, and rice.
Step 7
Add honey and salt to taste.
Step 8
Transfer the filling into the pumpkin. The filling will expand during cooking, so be sure not to fill the pumpkin to the brim.
Step 9
Place pieces of butter on top and cover with the pumpkin lid.
Step 10
Place in the oven preheated to 356°F for 1.5 hours.
