- Dorado - 3 pieces
- Tomatoes - 2 pieces
- Olives stuffed with lemon - 8 fl oz
- Lemon - 1 piece
- Garlic - 2 cloves
- Paprika - 1 teaspoon
- Ground Cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cayenne Pepper - a pinch
- Ginger - ½ teaspoon
- Meyer Lemon Juice - 0 fl oz
- Citrus Zest Mix - 1 piece
- Cilantro - 1 teaspoon
- Parsley - 0.2 oz
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Combine all the sauce ingredients in a food processor and chop (sauce ingredients: from garlic to parsley).
Step 3
Clean the fish, rinse, and pat dry. Season the inside with sea salt and ground black pepper.
Step 4
Place on a large baking sheet or in a baking dish, make 3 cuts, and rub with the herb paste. Sprinkle with tomato pieces and olives. Bake for 15-20 minutes until cooked through. Serve with lemon wedges.
