Artichokes with Serrano Ham
Ingredients
- Breadcrumbs - 2½ tablespoons
- Serrano Chili - 5.3 oz
- Artichoke bottoms - 12 pieces
- Lemon - 1 piece
- Salt - to taste
- Safflower Oil - 2 tablespoons
- Garlic - 1 piece
- Chicken Broth - 3 fl oz
- Dry White Wine - 1 tablespoon
- Chopped Sage Leaves - 1 tablespoon
Step by Step guide
Step 1
Juice the lemon and pour half into a large bowl of water.
Step 2
Cut off the stems of the artichokes and remove the tough outer leaves. Trim the tips of the remaining leaves. Open the center of the artichoke and remove the choke. Drizzle the artichokes with the juice from the remaining half of the lemon and place them in the lemon water.
Step 3
Mix the ham, 1.5 tablespoons of breadcrumbs, wine, garlic, and parsley in a bowl.
Step 4
Dry the artichokes and fill them with the ham mixture. Then place the artichokes filling side up in a pot large enough to hold them in a single layer. Add enough water to cover the artichokes.
Step 5
Dissolve the broth cube in a small amount of water and add it to the artichokes. Sprinkle with the remaining breadcrumbs and drizzle oil over the artichokes. Bring to a boil, reduce the heat, cover, and cook for 30 minutes. Season with salt if needed (remember that the ham is quite salty, and the cube contains salt). Cover the pot again and cook for another 30 minutes, until the liquid has turned into a sauce and the artichokes are tender. Serve on a plate with the sauce.
