- Garlic - 1 clove
- Asiago cheese - 3.5 oz
- Arugula - 9.9 oz
- Pistachios - 2.1 oz
- Meyer Lemon Juice - 1 tablespoon
- Citrus Zest Mix - 2 teaspoons
- Olive Oil - ¼ cup
Step by Step guide
Step 1
In a food processor or blender, chop the garlic, then add the grated cheese and nuts. Blend again until the nuts are very fine.
Step 2
Add the arugula, lemon juice, and zest. Blend until it reaches a paste-like consistency.
Step 3
Then, while mixing, gradually add the olive oil. Season with salt and pepper, and add more lemon juice to taste. Transfer to a bowl, cover, and chill.
