Arugula and Tomato Salad
Ingredients
- Pitted olives - 1 can
- Thyme - 1 sprig
- Marinated cherries - 8 pieces
- Olive Oil - 2 tablespoons
- Arugula - 5.3 oz
- Balsamic Vinegar - 1 tablespoon
- Parmesan Cheese - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the arugula and place it in a salad bowl.
Step 2
Add the olive oil and balsamic vinegar.
Step 3
Cut the cherry tomatoes in half and add them to the salad, gently squeezing out some juice.
Step 4
Grate the cheese using a coarse grater, or if possible, just break it by hand.
Step 5
Drain the olives and add them to the salad whole.
Step 6
Strip the thyme leaves from the sprig.
Step 7
Add salt and pepper to taste — it will depend on the cheese.
