Ingredients
- Red seedless grapes - 8.8 oz
- Shallot - 1 head
- Sherry Vinegar - 1 tablespoon
- Coarse Salt - 1 tablespoon
- Balsamic Vinegar - 1 tablespoon
- Olive Oil - 1 cup
- Ground Black Pepper - to taste
- Arugula - 8.8 oz
- Grated Pecorino Romano Cheese - 3.5 oz
- Toasted almonds - 4.6 oz
Step by Step guide
Step 1
Finely chop 7 grapes and transfer them to a small bowl. Cut the remaining grapes in half and place them in another small bowl; set aside. Use a fork to mash the grapes in the bowl until they reach a puree consistency. Add the shallot, 1 tablespoon of sherry vinegar, and 1/4 teaspoon of salt; let it sit for 5 minutes. Mix the oil with 1 tablespoon of saba. Add salt, pepper, or vinegar to taste.
Step 2
Combine the arugula and halved grapes in a large bowl; drizzle with the dressing and season with salt and pepper. Shake the bowl to mix the ingredients. Divide the salad among chilled plates. Sprinkle with cheese and almonds. Drizzle with saba.
