Ingredients
- Fresh Mint - ½ bunch
- Arugula - 3.5 oz
- Soy Sauce - 3 fl oz
- Olive Oil - 2 tablespoons
- Chicken fillet - 17.6 oz
- Grapefruits - 1 piece
- Parsley - 1 bunch
- Toasted Sesame - 1½ tablespoons
Step by Step guide
Step 1
Let's start preparing the salad; first, we need to wash and dice the chicken breast.
Step 2
Then we pour soy sauce over the breast and let it marinate for about 30–40 minutes.
Step 3
While the breast is marinating, we'll begin preparing the other ingredients.
Step 4
Toast the sesame seeds in a dry skillet until light brown, without using oil.
Step 5
Chop the parsley and mint together finely.
Step 6
Peel the grapefruit from the skin, white membranes, and seeds; you can cut it with a knife or, as I did, simply tear it into small pieces.
Step 7
Once our fillet has marinated enough, we drain the soy sauce.
Step 8
In a large skillet, heat 1½ tablespoons of olive oil and add the chicken breast.
Step 9
Sear on all sides until golden brown and a crispy crust forms.
Step 10
First, place the arugula, sprinkle with chopped parsley and mint, then add the grapefruit and chicken breast, and top with sesame seeds.
Step 11
Drizzle the salad with olive oil. Serve in portions.
