- Pancetta - 6 pieces
- Olive Oil - 1½ tablespoons
- Arugula - 9.9 oz
- Meyer Lemon Juice - 1 tablespoon
- Kalamata olives - 2.1 oz
- Parmesan Cheese - to taste
Step by Step guide
Step 1
Place the pancetta in a single layer in a skillet and fry over medium heat for about 8 minutes until crispy, without flipping. Transfer to a paper towel.
Step 2
In a small bowl, mix the lemon juice and olive oil. Season with salt and pepper.
Step 3
Place the arugula and sliced olives in a bowl and drizzle with the lemon dressing. Toss well.
Step 4
Divide the salad onto 2 plates and top with pieces of pancetta and shavings of Parmesan.
