Ingredients
- Whole egg - 1 piece
- Dijon Mustard - 1 oz
- Sugar - 7½ g
- Salt - 0.1 oz
- Oyster Mushrooms - 1 fl oz
- Soy Sauce - 1 fl oz
- Lime - 2 pieces
- Lime Juice - 0 fl oz
- Mild Chili Spice - 2 lbs
- Meyer Lemon Juice - 1 fl oz
- Olive Oil - 1 fl oz
- Vegetable Oil - 17 fl oz
Step by Step guide
Step 1
Smoke the chili peppers for two hours using cherry wood chips.
Step 2
Roast the smoked pepper in the oven for 30 minutes at 356°F.
Step 3
Blend with 20 ml of lemon juice and olive oil.
Step 4
Prepare the mayonnaise by mixing the egg yolk, 7 ml of lemon juice, lime juice, Dijon mustard, sugar, and salt. Gradually pour in the chilled sunflower oil in a thin stream.
Step 5
Take 300 ml of mayonnaise and blend it with pepper paste, the zest of two limes, oyster sauce, and soy sauce.
