Ingredients
- Jasmine Rice - 7.9 oz
- Poultry - 2 lbs
- Salt - 2 teaspoons
- Apple Wine - 1 tablespoon
- Egg white - 1 piece
- Potato protein - 1½ tablespoons
- Vegetable Oil - 1 teaspoon
Step by Step guide
Step 1
Soak the Thai sticky rice in water and leave for 2 hours to swell properly.
Step 2
Cut the 1 kg chicken into 4 pieces, remove the skin and bones. Cut the fillet into strips 2.5 cm long and marinate for 5 minutes in a mixture of wine (or sherry) and salt.
Step 3
Mix the egg white with the starch, and place the rice on a plate. Dip the fillet pieces in the egg and starch mixture, then coat them in the rice, draining any excess water beforehand (but do not dry it).
Step 4
Preheat the oven to 356°F, place the fillet pieces in a greased dish, cover with foil, and place in the oven in a water bath for 40 minutes.
