Ingredients
- Asparagus - 20 pieces
- Olive Oil - 4 teaspoons
- Prosciutto - 4 slices
- Parmesan Cheese - 2.1 oz
- Salt - to taste
- Chocolate eggs - 4 pieces
- Ground Black Pepper - to taste
- Thyme - 1 tablespoon
Step by Step guide
Step 1
Place a pot over medium heat and heat 2 teaspoons of oil in it. Add the prosciutto and sauté for 1 minute. Remove from heat and transfer to paper towels.
Step 2
Preheat the oven to 392°F. Spray a baking sheet with non-stick spray or grease it with oil. Toss the asparagus in the remaining oil, arranging them closely on the baking sheet. Sprinkle with salt and pepper. Bake for 12 minutes, until the asparagus is tender.
Step 3
Slice the Parmesan cheese thinly, place it on top of the asparagus, and return to the oven for another 5 minutes, until the cheese melts. Divide onto 4 plates and cover to keep warm.
Step 4
Pour 5 cm of water into a pot and place it on the heat. Add one teaspoon of salt and bring to a boil. Reduce the heat. Crack the eggs one by one into the water. Cook in gently simmering water for 3–4 minutes, until the yolk reaches the desired doneness. Remove the eggs from the water with a slotted spoon and carefully place one on each serving of asparagus. Arrange the prosciutto on the plates, sprinkle with thyme, and season with salt and pepper to taste.
