Description

If you have a complicated relationship with pork, you can try making carbonara with zucchini. It's all the same, just swap one for the other.

Ingredients

  • Spaghetti - 7.1 oz
  • Parmesan Cheese - 0.5 oz
  • Grated Pecorino Pepato Cheese - 0.5 oz
  • Chicken Egg - 2 pieces
  • Whole egg - 1 piece
  • Pork Neck - 0.7 oz

Step by Step guide

Step 1

Put salted water on for the pasta.

Step 2

Start frying the coarsely chopped neck in olive oil.

Step 3

Grate the Parmesan and Pecorino Romano.

Step 4

Transfer the grated cheese to a bowl and crack in two whole eggs and one yolk.

Step 5

Season with pepper and mix well.

Step 6

When the neck is nicely browned, reduce the heat.

Step 7

Now for the important part. When the spaghetti is cooked, transfer it to the skillet and mix it with all the oil and pork. The skillet should not be hot at this stage! Once everything is well mixed, pour our egg and cheese sauce into the skillet. The eggs will cook from the heat of the spaghetti, and if the skillet is too hot, you'll end up with an omelet.

Step 8

That's it! Season with pepper on top and serve. If you warm the plates in advance, the food will stay hot longer.
