Description

The true Italian original recipe stipulates that no oil is added when frying the pancetta. The pancetta can be either salted or smoked, or fresh; both options are included in the original recipe. Pay attention to the salt: Since both the pancetta and pecorino are already salty, the water for boiling the spaghetti should be lightly salted, and the sauce should not be salted at all. Just in case, check the salt for taste while preparing the sauce, before adding the spaghetti.

Step by Step guide

Step 1

Frying the pancetta: After the pancetta or cheek lard is chopped into cubes, it is fried in its own fat, which melts to a transparent consistency, and no oil is needed for this. After that, the pancetta should cool slightly in the pan (otherwise, if it is hot when combined with the eggs, the hot fat will cook the eggs hard).

Let the pancetta cool in the pan.

Meanwhile, in a large round bowl, such as a salad bowl, and only in glass or porcelain (not plastic), place 4 yolks and 1 whole egg, and whisk everything together. Another condition: To the four yolks of very fresh eggs, add one whole egg. This will give the creaminess and creamy consistency, and no other additions like cream are allowed in this recipe.

After that, add the grated Pecorino, season with pepper — the sauce is ready.

Cook the spaghetti or any pasta with internal holes, as it will absorb the sauce well. Note! When boiling the spaghetti, at the moment of turning off the heat, add a glass of cold water to stop the cooking process, as even with the stove off, the spaghetti continues to 'cook' and even an extra minute can ruin the effect!

Step 6

At this time, transfer all the contents from the pan, i.e., the already cooled pancetta to a warm temperature and its fat into the salad bowl, where the eggs were previously mixed with the grated cheese and freshly ground pepper. Again, mix everything vigorously with the pancetta.

Step 7

Add the freshly cooked spaghetti or other pasta to the bowl. Mix with two large spoons and a fork, lifting it up rather than stirring in circles or haphazardly. It is better to use wooden utensils to avoid damaging the integrity of the cooked pasta.

Step 8

Serve everything at the table.
