Description
A version of an autumn salad similar to one made with radishes and radish greens, where radishes are replaced with the more readily available daikon in the fall.
Ingredients
- Cilantro leaves - 1 bunch
- Cucumbers - 4 pieces
- Daikon - 1 piece
- Green onions - 1 bunch
- Plain Yogurt - 4.4 oz
- Flower honey - 2 teaspoons
- Dijon Mustard - 2 teaspoons
Step by Step guide
Step 1
Cut the cucumbers in half lengthwise, then slice them as thinly as possible into half-moons.
Step 2
Peel the daikon (about 300-400 grams) so that it is roughly the same volume as the cucumbers, and grate it on a coarse grater that produces slices.
Step 3
Chop the cilantro finely. Cut the green onions into pieces about 0.5 cm long.
Step 4
For the dressing, mix the yogurt, honey (2 teaspoons), and mustard (2 teaspoons). You can do this in a bowl or place everything in a small glass jar with a tight-fitting lid and shake well.
Step 5
Combine everything in a salad bowl, pour the dressing over it, and mix well.
