Description

- Wheat Flour - 12.7 oz
- Kefir - 8 fl oz
- Activated Baking Soda - 0.1 oz
- Lamb - 35.3 oz
- Garlic - to taste
- Herbs - to taste
- Salt - 0.1 oz
Step by Step guide
Step 1
Start boiling the lamb, season the broth with salt and spices to taste.

While the meat is cooking, prepare the dough: mix the flour with baking soda and salt,

add the kefir and knead the dough well; it should not be too stiff.

Cover the dough and let it rest for one hour.

Then roll out to a thickness of 1 cm and cut into diamonds slightly smaller than a matchbox.

Remove the cooked meat from the broth.

Also, leave about a cup of broth for the sauce.

In the boiling broth, add the pieces of dough, stir, and set a timer for 4 minutes.

Reduce the heat to medium.

After four minutes, you need to quickly remove the dough and pierce each piece through with a fork; this is important, otherwise the khinkal will deflate and turn blue. For practice, you can boil the dough in batches instead of all at once.
