Ingredients
- Avocado - 0.6 pieces
- Lime Juice - 2 tablespoons
- Grated Lemon Zest - 2 teaspoons
- Red Bell Pepper - 0.6 pieces
- Vegetarian feta cheese - 2.1 oz
- Green Onion - 0.9 oz
- Chopped Cilantro (Coriander) - 0.9 oz
- Chili Sauce - 1 teaspoon
- Rice Paper - 8 pieces
- Alfalfa sprouts - 4.9 oz
- Mango - 1.5 pieces
Step by Step guide
Step 1
Combine avocado, lime juice, and lemon zest in a small bowl. Add bell pepper, feta cheese, cilantro, green onion, and chili sauce. Set aside.
Step 2
Fill a large bowl (20 cm in diameter) with warm water. Submerge 1 sheet of rice paper in the water for 10 seconds or until softened. Remove the sheet and lay it flat on a surface. Allow it to soften for 30 seconds.
Step 3
Spoon less than ¼ cup of the avocado mixture slightly below the center of the rice paper sheet, leaving a 2.5 cm edge. Add ¼ cup of alfalfa sprouts and 2-3 slices of mango. Fold the bottom edge of the rice paper over the filling, pressing down.
Step 4
Fold the sides of the rice paper inward. Gently press. Roll the roll to the end. Moisten the top edge with water, if necessary, for better sealing.
Step 5
Repeat the same steps with the remaining sheets of rice paper and filling.
