Avocado, Watercress, and Sun-Dried Tomato Salad

Ingredients

  • Avocado - 1 piece
  • Watercress - 1 bunch
  • Sun-Dried Tomatoes - 8 pieces
  • Vegetable Oil - 2 tablespoons
  • Lemon - 1 piece
  • Cucumbers - 2 pieces
  • Grapefruits - 1 piece

Step by Step guide

Step 1

Peel the avocado, cut it in half, remove the pit, and slice it into pieces (about 1 cm wide and 2 cm long). Place in a bowl and drizzle with lemon juice.

Step 2

Add the sun-dried tomatoes (you can leave them whole) and the thinly sliced cucumber to the same bowl.

Step 3

In a separate bowl, place the coarsely chopped watercress. Drizzle with lemon juice and grapefruit juice, then mix.

Step 4

On a plate where the salad will be served, layer half of the watercress, then the salad mixture, drizzle with olive and/or grape seed oil, and top with the remaining half of the watercress.
