Ingredients
- Eggplants - 3.5 oz
- Salad Potatoes - 3.5 oz
- Onion - 0.9 oz
- Vegetable Oil - 0 fl oz
- Orange Bell Peppers - 0.9 oz
- Chinese green beans - 1.4 oz
- Tomatoes - 1.8 oz
- Salt - 0.2 oz
- Herbs - to taste
Step by Step guide
Step 1
Peel the eggplants and cut them into slices, sprinkle with salt, let them sit for 10–15 minutes, then squeeze and rinse.
Step 2
Place the prepared eggplants in a pot, pour in the vegetable oil, add the peeled and diced potatoes, bell pepper, finely chopped onion, cleaned and cut green bean pods, diced tomatoes, roughly chopped herbs, and salt.
Step 3
Then layer the second row of vegetables and herbs in the same order, sprinkle with salt again, top with herbs, drizzle with oil, add a little water, cover the vegetables with an overturned plate, cover the pot with a lid, and simmer on low heat until the ingredients are cooked.
