Description
For the Caesar dressing, whisk together 40 grams of Dijon mustard with five egg yolks, then gradually drizzle in 90 ml of cold olive oil while continuing to stir. Once the mixture is smooth, fold in 35 grams of crushed anchovies, 35 ml of lemon juice or white wine vinegar, and 20 grams of grated Parmesan cheese.

- Panko breadcrumbs - 3.5 oz
- Eel - 1.8 oz
- Caesar Dressing - 3 fl oz
- Vegetable Oil - 1 tablespoon
- Tomatoes - 1 piece
- Hamburger Bun - 4 pieces
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Chop half of the shrimp coarsely with a knife. Grind the other half through a meat grinder using the medium or fine grate. Combine both mixtures, knead, and beat well.
Step 2
Shape the patties using a cooking ring, coat them in panko breadcrumbs, and fry in vegetable oil for two and a half minutes on each side; when flipping, season with salt and pepper.
Step 3
Chop the lettuce, mix it with half of the Caesar dressing, and place it on the bottom halves of the buns. Then add the patties, sliced tomatoes, and the top halves of the buns spread with the dressing.
