Description

To prepare this dish, you will need several unpeeled garlic cloves—be sure to leave them in their skins. The dish should be served with young potatoes sautéed in olive oil.

Ingredients

  • Chicken bones - 8 pieces
  • Garlic - 8 cloves
  • Meyer Lemon Juice - 1 fl oz
  • Thyme - 1 tablespoon
  • Sweet Pepper - 1 piece
  • Red Long Chili Peppers - 1 piece
  • Olives stuffed with lemon - 6.5 oz
  • Olive Oil - to taste

Step by Step guide

Step 1

Rinse the chicken drumsticks and pat them dry with a paper towel.

Step 2

Peel and mince two cloves of garlic. In a small bowl, combine the minced garlic, lemon juice, thyme, a couple of tablespoons of olive oil, salt, and black pepper to taste. Mix everything together thoroughly.

Step 3

Cut the sweet peppers into large cubes. Place the peppers and the remaining garlic in a heatproof dish where you will be baking the chicken. Preheat the oven to 374°F and put the vegetables in for 10 minutes.

Step 4

Then remove the dish from the oven, place the chicken inside, and pour the lemon-olive mixture over it. Bake the chicken for about half an hour. Then add the olives to the same dish and keep it in the oven for another 10 minutes until fully cooked.
