Description
If you don't have coconut milk on hand or simply don't like it, you can substitute it with regular plain yogurt. As a side dish, you can serve sweet potato fries or eggplant caviar using my quick recipe.

- Chicken Drumstick - 3 pieces
- Tikka Masala - 1 tablespoon
- Meyer Lemon Juice - 0 fl oz
- Ground Black Pepper - to taste
- Coarse Salt - to taste
- Coconut Milk - 1 cup
- Thyme - to taste
Step by Step guide
Step 1
Prepare the chicken drumsticks: rinse them, separate into thighs and drumsticks, and remove the skin (if desired). Let the meat dry and breathe, meanwhile...
Step 2
Prepare the marinade: in a separate bowl, mix the tandoori spice, coconut milk, and the juice of half a lemon. Mix thoroughly.
Step 3
Combine the marinade with the chicken: you can use airtight plastic food bags (for example, those intended for freezing), placing the prepared chicken drumsticks inside and pouring the marinade over them. Make sure the meat is well coated with the marinade.
Step 4
For the chicken to absorb the flavors well, it is advisable to marinate it in the refrigerator for about 8 hours. I usually prepare everything and marinate it in the morning so that by dinner, the meat can be baked and served hot.
Step 5
An hour before dinner, preheat the oven to 428°F in bake mode with air circulation.
Step 6
While the oven is heating up, line a baking sheet with foil (the fat and juices from the meat will drip onto it, and after cooking, it's easier to just throw away the used foil than to clean the baking sheet). Place the marinated drumsticks on a rack above the baking sheet. You can place sprigs of thyme on top of the pieces of meat for aroma (if desired).
Step 7
Once the oven has reached the desired temperature, bake for about 20 minutes (until the top of the pieces becomes slightly golden), then turn the meat over and bake for another 20 minutes (until the meat is cooked through).
Step 8
Before serving, garnish with sprigs of thyme.
