Baked chicken drumsticks with vegetables
Ingredients
- Vegetable Oil - 1 fl oz
- Chicken Drumstick - 28.2 oz
- Tomatoes - 7.1 oz
- Marinated cherries - 7.1 oz
- Orange Bell Peppers - 1 piece
- Orange Bell Peppers - 1 piece
- Onion - 1 piece
- Rosemary - 3 sprigs
- Garlic - 3 cloves
- Ground Black Pepper - ¼ teaspoon
- Salt - 1 teaspoon
Step by Step guide
Step 1
Season the chicken with salt and fry in a preheated skillet until golden brown.
Step 2
Transfer the fried chicken to a large baking dish.
Step 3
Wash and dry the vegetables.
Step 4
Dice the tomatoes, clean the bell peppers, cutting one half into cubes and the other half into strips.
Step 5
Thinly slice the onion, and chop the garlic and leaves from one sprig of rosemary. (I replaced rosemary with parsley, as I don't like the strong aroma of rosemary.)
Step 6
In the skillet where the chicken was fried, sauté the onion until translucent, then add the tomatoes and bell peppers.
Step 7
Cook for 5 minutes over high heat, stirring. Towards the end, add the finely chopped garlic and rosemary leaves.
Step 8
Season with salt and pepper to taste.
Step 9
Pour the resulting sauce over the chicken, and top with the pepper strips and cherry tomatoes (don't skip these, they greatly enhance the flavor of the dish). Place the rosemary sprigs on top as well.
Step 10
Place in a preheated oven at 392°F and bake for 15 minutes.
Step 11
Serve with boiled basmati rice.
