Baked Chicken Meatballs in Tomato Paste
Ingredients
- White bread - 3 pieces
- Milk - 0.3 cups
- Pancetta - 3 oz
- Onion - 1 head
- Garlic - 1 clove
- Olive Oil - 2 tablespoons
- Chicken Egg - 1 piece
- Ground meat - 15.9 oz
- Chopped Sage Leaves - 3 tablespoons
- Passata Tomato Sauce - 2 tablespoons
Step by Step guide
Step 1
Preheat the oven to 392°F. In a small bowl, soak the bread in milk for about 4 minutes until soft.
Step 2
Heat a skillet and add 1 tablespoon of olive oil. Sauté the finely chopped pancetta, onion, and minced garlic over medium heat for about 6 minutes, adding a little salt and pepper, until the onion is soft. Let it cool slightly.
Step 3
In a large bowl, lightly beat the egg and mix it with the ground chicken, 1 tablespoon of tomato paste, the squeezed bread, the pancetta mixture, and parsley. Shape the mixture into 12 meatballs and place them in a rectangular baking dish.
Step 4
Mix the remaining oil and tomato paste and brush it over the meatballs. Bake in the oven for about 15-20 minutes until cooked through.
