Description
The name "cod" has an interesting origin. In the 11th and 12th centuries, cod was referred to in Russia as a stick or rod, which makes sense—if you overcook cod fillet, it can turn into something wooden. In this recipe, we tackle dryness in a delicious way: by placing pieces of cod fillet on a bed of lemon and garnishing with tomatoes. The acidity of the lemon gently softens the fibers, while the juiciness of the tomatoes prevents it from drying out, resulting in tender fish accompanied by a light garnish.
Ingredients
- Cod fillet - 28.2 oz
- Lemon - 1 piece
- Garlic - 2 cloves
- Marinated cherries - 7.1 oz
- Thyme - 2 sprigs
- Olive Oil - 2 fl oz
- Parsley - 1 sprig
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Slice the lemon into thin rings.
Step 2
Crush unpeeled garlic cloves with the flat side of a knife.
Step 3
Remove the leaves from the thyme sprigs.
Step 4
Arrange the lemon slices in a single layer in the baking dish, sprinkle with thyme leaves, and drizzle with olive oil.

Pat the cod fillet dry with a paper towel, then season with salt and pepper.
Step 6
Place the cod on the lemons.
Step 7
Top with garlic and whole cherry tomatoes, drizzle with oil again, and place in an oven preheated to 392°F for 15 to 20 minutes.
Step 8
Chop the parsley.
Step 9
Serve the cooked cod sprinkled with parsley and drizzled with lemon juice.
