Baked Cod with Beans
Ingredients
- Olive Oil - 4 teaspoons
- Canned Baby Beets - 21.2 oz
- Chopped Sage Leaves - 4 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Cod fillet - 21.2 oz
- Dry White Wine - 8 tablespoons
Step by Step guide
Step 1
Mix olive oil with finely chopped fresh parsley, salt, and ground black pepper.
Step 2
Line a baking sheet with four equal sheets of foil, placing a mound of pre-cooked or canned beans on each one. For Christmas and New Year’s tables, Lima beans are preferred, as they resemble a crescent shape.
Step 3
Drizzle the beans with the oil and spice mixture, lifting and slightly folding the edges of the foil.
Step 4
Place a piece of fresh cod fillet on each mound of beans. Drizzle the fish with wine and season with salt and pepper.
Step 5
Seal the edges of each sheet of foil so that the fish and beans are completely enclosed.
Step 6
Place the baking sheet with the four filled fish and bean packets in an oven preheated to 347°F and leave for 20 minutes or a little longer (depending on the size and thickness of the fish fillet).
Step 7
Carefully transfer the cooked cod and beans to plates and serve immediately, garnished with a sprig of parsley.
