Ingredients
- Dorado - 3 lbs
- Marinated cherries - 17.6 oz
- Olive Oil - 6 tablespoons
- Garlic - 3 cloves
- Water - 17 fl oz
- Oregano - 2 tablespoons
- Parsley - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Gut the dorado (preferably one large fish, but you can use 3-4 smaller ones), clean it (do not cut off the head and fins), rinse, dry with a paper towel, and season with salt and pepper.
Step 2
Cut the tomatoes into quarters. Slice the garlic lengthwise.
Step 3
Preheat the oven to 392°F (356°F for convection ovens).
Step 4
Drizzle olive oil in a deep baking dish, place the fish in it. Add the tomatoes and garlic to the dish, sprinkle with oregano. Carefully pour in the water. Place the dish in the preheated oven for 40-50 minutes.
Step 5
Before serving, sprinkle with parsley.
