Description
Of course, you can bake not only halibut this way, but any white or red fish. If you have a whole fish instead of fillets, I recommend opening it like a book and baking it with the bones, especially trout.

- Halibut - 17.6 oz
- Fresh Rose Hips - to taste
- Soy Sauce - 1 fl oz
- Honey - 1 tablespoon
- Chili jam - to taste
Step by Step guide
Step 1
Make the marinade: 50 ml of soy sauce, 1 tablespoon of honey, and chili paste to taste.
Step 2
Dip the fish (if it's not fillets, keep the bones as they add extra flavor) into the marinade and let it sit, turning occasionally, for about 20 minutes.
Step 3
Preheat the oven to 392°F (convection), and place the fish on a baking sheet along with the marinade, topping it with sprigs of rosemary.
Step 4
Bake for about 12–15 minutes, until browned at the edges and lightly golden on top. Don't overcook! Test with a fork — if the fork goes in easily, the fish is ready.
