- Chicken Broth - 2 tablespoons
- Dried Rosemary - 2 teaspoons
- Dried parsnip - 1 teaspoon
- Breadcrumbs - to taste
- Butter - 3.5 oz
- Grated Pecorino Pepato Cheese - 7.1 oz
- Milk - 17 fl oz
- Wheat Flour - 5 tablespoons
- Salt - 1 teaspoon
- Dijon Mustard - 1 teaspoon
- Cayenne Pepper - to taste
Step by Step guide
Step 1
Dice the onion and grate the garlic. Cut the broccoli into florets. In olive oil, sauté the onion over low heat for 3 minutes, then add the garlic and cook for another couple of minutes. Add 2 teaspoons of dried oregano and 1 teaspoon of parsley, stir, and let it cook for another minute. Add the ground beef, mix, and cook over low heat, stirring, until the meat changes color.
Step 2
Meanwhile, cook the pasta according to the package instructions. You can choose any type of pasta.
Step 3
Return to the meat mixture: add the broccoli (you can also use cauliflower or leeks, whatever you prefer!), a couple of tablespoons of chicken broth, and simmer covered over low heat for about 5 minutes.
Step 4
Now let's make the sauce. In 100 grams of melted butter over low heat, add 5 tablespoons of flour, stirring constantly for a minute. Then gradually pour in 500 ml of milk (you can use 750 ml, depending on how much sauce you want), add 1-2 teaspoons of Dijon mustard, and salt (I add 1 teaspoon of salt, but this is to taste—keep in mind that we are adding cheese to the sauce!). Let the sauce simmer on very low heat for a few minutes. Then add a pinch of cayenne pepper and the grated cheese (you can use Parmesan, Gouda, Cheddar, or others—according to your taste).
Step 5
In a baking dish, place the pasta and the meat mixture (you can mix them), pour the sauce over everything, sprinkle with breadcrumbs, and generously top with grated Parmesan. Bake for 15-20 minutes at 392°F until a golden crust forms.
