Baked Pasta with Cauliflower, Cheese, and Spinach
Ingredients
- Milk - 28 fl oz
- Wheat Flour - 1.8 oz
- Butter - 1.8 oz
- Dijon Mustard - 1 teaspoon
- Blue Cheese - 1.8 oz
- Ground Nutmeg - ½ teaspoon
- Penne Pasta - 8.8 oz
- Cauliflower - 2 lbs
- Frozen Spinach - 26.5 oz
- Toasted Pine Nuts - 0.9 oz
- Garlic - 4 cloves
- Olive Oil - 2 tablespoons
- Tomato Paste - 24.7 oz
- Cheese - 3.5 oz
Step by Step guide
Step 1
For the tomato sauce, sauté the chopped garlic in oil for 1 minute, then add the tomato paste. Season, partially cover the pot, and simmer for 20 minutes.
Step 2
Meanwhile, make the cheese sauce. In a saucepan, combine the milk, flour, and 50 g of butter. Heat and stir until smooth, then cook for 3 minutes, stirring to prevent lumps. Let cool for 5 minutes, then add the mustard, most of the cheese, half of the blue cheese, and half of the nutmeg.
Step 3
Boil the penne and cauliflower in salted water for 8 minutes. Reserve 2 tablespoons of the cooking water, then drain. Melt 1 tablespoon of butter in a skillet, add a whole clove of garlic, spinach, the remaining nutmeg, salt, and black pepper. Stir for 2 minutes, then remove the garlic clove.
Step 4
Set aside 300 ml of the cheese sauce, then add the rest to the cauliflower and pasta. Divide half of the tomato sauce among 6 plates, adding some spinach. Add the cauliflower, top with spinach, then the remaining tomato sauce. Drizzle with cheese sauce and sprinkle with pine nuts.
Step 5
Cover with plastic wrap, cool, and refrigerate for up to 2 days or freeze for up to 1 month.
Step 6
To cook, thaw. Preheat the oven to 200°C. Bake on a baking sheet for 18-20 minutes until golden brown. Serve well with a green salad or garlic bread.
