Baked Penne with Parmesan, Cream, and Prosciutto

Ingredients

  • Cream - 21 fl oz
  • Grated Pecorino Pepato Cheese - 6.3 oz
  • Penne rigate - 15.9 oz
  • Prosciutto - 3.5 oz
  • Ground Black Pepper - ¾ teaspoon
  • Salt - to taste

Step by Step guide

Step 1

In a small saucepan, combine the cream, 1½ cups of grated Parmesan, pepper, and salt (¾ teaspoon). Over medium heat, stirring constantly, bring the mixture to a boil and immediately remove from heat.

Step 2

In a large pot, bring water to a boil, add salt (1½ teaspoons of salt per 6 liters of water), and add the pasta. Cook for 1 minute less than the package instructions. Drain the cooked pasta in a colander, discard the water, and return the pasta to the pot.

Step 3

Roughly chop the thin slices of prosciutto and add them along with the cream sauce to the pot with the pasta.

Step 4

Mix thoroughly, transfer the pasta to a baking dish (not glass), and place it in an oven preheated to 374°F. Bake for 15 minutes on the middle rack.

Step 5

Remove the pasta from the oven, stir again, sprinkle with Parmesan (2 tablespoons), and return to the oven. Bake in the lower third of the oven for 2–4 minutes, until the penne are lightly browned on top.
