Ingredients
- Orange Bell Peppers - 4 pieces
- Feta cheese - 12.3 oz
- Oyster Mushrooms - 10.6 oz
- Arugula - 1 bunch
- Olive Oil - 3 tablespoons
- Ground Black Pepper - to taste
- Balsamic Vinegar - 1 tablespoon
Step by Step guide

Wash the peppers, make cuts along them, and carefully remove the seeds under running water, then dry the peppers.
Step 2
Thoroughly rinse the mushrooms, remove the tough part of the stems, and chop finely.
Step 3
In a skillet, heat 2 tablespoons of olive oil and sauté the mushrooms, stirring, until golden brown.
Step 4
Mash the feta cheese with a fork (if you use a hard type of feta, grate it). Chop the arugula.
Step 5
In a bowl, mix the feta cheese, arugula, and sautéed mushrooms, seasoning with black pepper to taste.

Stuff the peppers with the mixture (I had enough filling left for one more pepper, resulting in 5 stuffed peppers—3 large and 2 small).

Line a baking dish with foil or parchment paper.

Brush the peppers with olive oil, place them in the dish, and put them in a preheated oven at 392°F for 1 hour (until the skin puffs up). During the hour, gently turn the peppers several times to ensure even baking.
Step 9
Serve the peppers hot, drizzled with balsamic vinegar.
