Ingredients
- Skate Fillet - 28.2 oz
- Milk - 12 fl oz
- Butter - 2.1 oz
- Onion - 1 head
- Garlic - 1 clove
- Wheat Flour - 2 tablespoons
- Meyer Lemon Juice - 2 tablespoons
- Citrus Zest Mix - 2 tablespoons
- Dill - 1 tablespoon
- Salad Potatoes - 17.6 oz
- Cream - 3 tablespoons
- Chicken Egg - 1 piece
- Cheshire Cheese - 2.1 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Boil the potatoes until soft, mash them, and add the cream. Whip well, adding salt to taste. Then beat in the egg and 30 grams of butter. Mix with half of the cheddar and keep warm.
Step 2
Place the cut fish pieces in a pan and pour in the milk, bring to a boil, reduce the heat, and cook for 2 minutes. Drain. Keep the milk, and transfer the fish to a large baking dish.
Step 3
In the pan, melt the remaining butter and add finely chopped onion and garlic, sauté for 2 minutes. Add the flour and cook for another minute. Remove from heat and slowly, vigorously stir in the reserved milk. Return to heat and cook until thickened. Reduce heat and simmer for another 2 minutes. Then add the lemon zest and juice, and chopped dill, along with salt. Mix the sauce with the fish and sprinkle with the remaining cheddar. Bake for 35 minutes until golden brown.
Step 4
Serve with mashed potatoes.
