Baked Pike Perch with Cheese and Omelette

Ingredients

  • Pike Perch Fillet - 3.5 oz
  • Cheese Spread - 3.5 oz
  • Lemon - 1 piece
  • Salt - a pinch
  • Ground Black Pepper - a pinch
  • Bay leaf - 1 piece
  • Tomatoes - 1 piece
  • Chicken Egg - 1 piece
  • Field Horsetail - 3.5 oz
  • Milk - 1 fl oz
  • Pitted olives - 2 pieces
  • Wheat Flour - 2 tablespoons
  • Green Butter - 1 tablespoon
  • Chinese green beans - 1 bunch

Step by Step guide

Step 1

Cut the pike perch fillet into pieces 4–5 cm wide. Mix the juice of half a lemon, ground black pepper, salt, and bay leaf. Place the fish pieces in this mixture for 5–10 minutes.

Step 2

Clean the horsetail leaves, blend them in a blender or meat grinder. Mix with the egg and milk, then add the flour. Bake in the oven like a casserole/omelette for 5–7 minutes.

Step 3

Place the marinated pike perch pieces on a baking sheet, add a quarter slice of lemon on each, and generously sprinkle with grated cheese. Put in the oven for 10–15 minutes.

Step 4

Remove the omelette from the oven, roll it up, cut it diagonally into 2 pieces, and trim the uneven ends diagonally as well.

Step 5

Fry 3 slices of tomato on both sides in a grill pan.

Step 6

Take the fish out of the oven, place it on a plate, and arrange the omelette opposite. Garnish with the prepared tomato slices, lemon pieces, two olives, and a bunch of herbs. Drizzle the omelette and herbs with green oil.
