Baked pork ribs with herb crust and young potatoes
Ingredients
- Olive Oil - 2 fl oz
- Garlic - 3 cloves
- Dried Rosemary - 1.1 oz
- Chopped Sage Leaves - 1.1 oz
- Chopped Sage Leaves - 1.1 oz
- Pork Skewers - 5 lbs
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- New Potatoes - 2 lbs
Step by Step guide
Step 1
Preheat the oven to 428°F.
Step 2
In a bowl, mix the olive oil, chopped garlic, rosemary, thyme, and sage.
Step 3
Season the meat with salt and pepper and rub half of the herb mixture onto it.
Step 4
Place the meat in a baking dish and put it in the oven for 15 minutes.
Step 5
Reduce the temperature to 374°F and roast the meat for another 30 minutes.
Step 6
Meanwhile, cut the potatoes in half and toss them with the remaining herb mixture. Season with salt and pepper and place them cut side down next to the meat. Roast for another 30 minutes until the potatoes and meat are cooked through.
Step 7
Transfer the meat to a cutting board and let it rest for 15 minutes.
Step 8
Slice between the bones and arrange on a platter, serving immediately with the potatoes.
