  • Potato - 4 pieces
  • Garlic - 4 cloves
  • Butter - 3.5 oz
  • Sour Cream - 2 spoons
  • Bacon - 4 pieces
  • Dill - to taste
  • Hard Cheese - 7.1 oz
  • Scallions - to taste
  • Salt - to taste
  • Ground Black Pepper - to taste

Preheat the oven to 392°F. Wash and dry the potatoes thoroughly — the skin should be dry so that it can become golden and crispy. Rub each potato with a small amount of olive oil and salt, then place them in the oven for one to one and a half hours.

Half an hour before the potatoes are done, place unpeeled garlic cloves on a sheet of foil, season with salt and pepper, and add a bit of butter and a tablespoon of olive oil. Wrap it up and place it in the oven.

While the potatoes and garlic are roasting, finely chop the bacon slices and lightly fry them in a well-heated dry skillet until golden brown. Set aside for a while.

Remove the potatoes from the oven and let them cool. Using a sharp knife, cut the potatoes in half lengthwise, then carefully scoop out the flesh with a spoon, trying not to damage the skin, and transfer it to a large bowl.

Add the roasted garlic, peeled, to a bowl along with sour cream, a bit of olive oil, chopped herbs, crispy bacon, and most of the grated cheese (leaving aside five to six tablespoons). Gently mix everything together, being careful not to turn the mixture into a puree.

Using a tablespoon, fill each potato half with the prepared filling and place them skin-side down on a large baking tray. Preheat the grill in the oven.

Place a couple of cubes of very cold butter on top of each potato wedge and sprinkle with the remaining grated cheese. Bake in the oven for seven to ten minutes.

Bake the potatoes until a light golden crust forms. Allow the cooked wedges to cool slightly, then serve immediately, drizzling with a small amount of olive oil.
