Baked Potatoes Stuffed with Leeks and Cheeses
Ingredients
- Salad Potatoes - 2 pieces
- Leek - 1 piece
- Boursin Cheese with Garlic and Herbs - 2.8 oz
- Cheshire Cheese - 1.4 oz
- 10% cream - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the potatoes, dry them, poke holes in several places with a fork, rub olive oil and salt into the skin. Bake in the oven for 1.5 hours until the skin is crispy.
Step 2
Remove the tough green leaves from the leek, rinse, and then chop.
Step 3
Cut the baked potatoes in half, scoop out the flesh, place it in a bowl, add cream, Boursin cheese, season with salt and pepper. Mash together.
Step 4
Stuff the potato halves with the mixture. Top with chopped leek and grated cheddar cheese.
Step 5
Bake at 356°F for 20 minutes.
