Baked Potatoes with Coconut Milk and Basil
Ingredients
- Onion - ½ head
- Coconut Milk - 12 fl oz
- Potatoes - 3 lbs
- Swiss Cheese - 1.8 oz
- Chopped Basil Leaves - ¼ cup
- Grated Parmesan cheese - 2.8 oz
Step by Step guide
Step 1
Place the rack in the upper third of the oven and preheat the oven to 200°C.
Step 2
Spray a 23*33 cm baking dish with cooking spray.
Step 3
Put the onion in a small bowl and pour the coconut milk over it. Let it steep for 10 minutes.
Step 4
Combine the potatoes, coconut milk, Swiss cheese, and basil in the prepared dish, seasoning with salt and pepper to taste if desired.
Step 5
Spread the potatoes out to cover the bottom of the dish (the coconut milk should cover the potatoes).
Step 6
Sprinkle with Parmesan. Bake for 35 minutes or until the potatoes are golden brown and easily pierced with a knife.
Step 7
Let cool for 15 minutes before serving.
