- Salad Potatoes - 4 pieces
- Safflower Oil - 1 tablespoon
- Sour Cream - 4.4 oz
- Onion - 1 head
- Aged gouda cheese - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F (356°F for convection). Line a baking sheet with parchment paper. Thoroughly wash the potatoes with a brush and pat them dry with a paper towel. Place the potatoes on the baking sheet and drizzle with sunflower oil. Bake in the preheated oven for about 1 hour.
Step 2
Meanwhile, grate the cheese on a coarse grater. Mix half of the cheese, sour cream, and a tablespoon of chopped onion. Add salt and pepper to taste.
Step 3
Slightly cool the potatoes. Cut a slice about 1 centimeter thick across each potato. Carefully scoop out the insides, leaving walls about 1 centimeter thick. Transfer the potato flesh to a bowl and mash it with a fork. Mix with the cheese, sour cream, and onion.
Step 4
Fill the potatoes with the mixture. Sprinkle with the remaining cheese. Place the potatoes back on the baking sheet and bake in the preheated oven for 15 minutes, until the cheese melts. Sprinkle with the remaining onion. Serve hot.
