Baked Potatoes with Onions and Mushrooms
Ingredients
- Red Onion - 2 heads
- Potatoes - 4 pieces
- Mushrooms - 10.6 oz
- Vegetable Oil - 0 fl oz
- Garlic - 2 cloves
- Lemon Zest - 1 piece
Step by Step guide
Step 1
Boil the potatoes in a large amount of salted water until half cooked. Drain.
Step 2
Preheat the oven to 356°F. Pour the vegetable oil into a skillet or baking dish. Add the potatoes and onions, season with salt to taste, and coat well in the oil.
Step 3
Place the mushrooms between the potatoes and onions and put everything in the preheated oven. Bake for 15–20 minutes. The vegetables should brown, and the mushrooms should soften.
Step 4
Add the garlic and half of the zest to the baked vegetables, mix well, and return to the oven for another 5 minutes.
Step 5
Remove the baked potatoes with onions from the oven and sprinkle with the remaining zest, and if desired, drizzle with lemon juice.
